Salsa Puerto Escondido

  • 3 large very ripe tomatoes, diced small
  • 2-3 T. ground chipotle chiles
  • 1 medium red onion, diced small
  • 1 t. minced garlic
  • 1/2 c. chopped cilantro
  • juice of 2 or 3 limes
  • liberal quantity salt and cracked black pepper to taste


Mix all the ingredients together and let sit a bit to let the flavours become well acquainted.
