Forage Caprese Picnic Salad

Find all your fresh ingredients at Calgary Farmers’ Market. Or buy this ready-made at Forage. Forage makes fresh pesto for Alf’s, a greenhouse grower at the Calgary Farmers’ Market.

Ingredients:

  • 1 lb Gull Valley Greenhouse tomatoes, cut into wedges
  • 2 c. cooked chunky pasta, such as bow tie, penne or radiatori
  • 8 small bocconcini cheeses, sliced (from Sylvan Star)
  • 2 T. Forage-Alf’s pesto
  • Salt and pepper to taste

Directions:

Gently toss the ingredients together in a bowl. Serves 4.
