Grilled Bison Steaks

Bison steaks are as simple to cook as beef steaks; you just have to treat them a little more gently.
- bison steaks, such as striploin or T-bone, no more than an inch thick
- canola oil
Preheat your grill to high on one side, and keep the other low or off. Bring the steaks to room temperature and rub them on both sides with a little oil. Sprinkle with salt.
Toss the steaks on the high side of the grill and cook for 2 minutes, then flip and cook for another 2 minutes. Transfer to the cool side of the grill and cook for another 4 minutes. Let rest for a few minutes before slicing. Serves as many as you like.
