Milagro Margarita for Two

Ingredients:

  • 3 oz. Milagro silver
  • 2 oz. Cointreau or Triple Sec
  • juice of 6 key limes
  • short squirt of agave nectar (available at whole foods stores)

Directions:

Shake all together over ice in a cocktail shaker, pour into two chilled martini glasses, garnish with rounds of key limes. Mmmmmm, dream of Mexico.

Tequila Sunset, Variation, for One

Ingredients:

  • 2 oz. reposado tequila
  • 1 oz. Cointreau or Triple Sec
  • 2 oz. orange juice
  • 2 oz. pineapple juice
  • granulated sugar
  • lemon or lime peel

Directions:

Rub the rim of a chilled martini glass with the lime or lemon peel and dip it lightly in the sugar. Shake the liquids with ice and strain into the glass.

Riu Emerald Bay Caipiriña for One

 

This national drink of Brazil calls for cachaça, a sugar cane-derived spirit. Vodka or white rum may also be used. Jésus at the Riu Emerald Bay swim-up bar used rum.

Ingredients:

  • 1 lime quartered
  • 1 T. sugar
  • 2 oz. white rum
  • soda

Directions:

Put the lime quarters in the bottom of a glass, pulp side up. Add the sugar, and muddle the limes and sugar by crushing and mashing the limes. Pour in the rum, stir, add a handful of ice cubes and fill the glass with soda. If you want to make this drink the Brazilian way, fill the glass with ice and stir well. Don’t add the soda.
