Roast Potatoes with Garlic, Herbs, Olive Oil and Sea Salt

1 lb. small new potatoes


olive oil

sea salt and freshly ground black pepper

1 sprig rosemary

1 sprig thyme

1 garlic head, sliced in half crosswise

Preheat an oven to 375°F. Place the potatoes in a saucepan, cover with cold water and add a good pinch of salt. Bring to a boil, turn down to a gentle simmer and cook for 8 minutes. After
8 minutes, drain the potatoes and place them
in a baking dish.

Drizzle the potatoes with the olive oil, then salt and pepper to taste, and add the herbs and garlic. Place in the oven and roast until the potatoes and garlic are tender. Serve in the baking dish.
