Impossible Coconut Pie

This was a recipe on the Bisquick box once upon a time. The Bisquick makes a crust on the bottom when the pie bakes, while the other ingredients make a coconut custard. Don’t turn your nose up until you try it!

1/2 c. sugar

1/2 c. Bisquick

4 eggs

1/4 c. butter, melted

2 c. milk

1/2 t. vanilla

1 c. shredded coconut

Blend the ingredients together on low speed for 30 seconds. Pour the mixture into a 10-inch pie tin. Bake it at 350°F. for 50 minutes. Cool the pie before serving. Serves 6.
